Mostly turned into sausage trim the ribeye of pork from a quality guilt pig can be as good if not better than a loin steak. Left as a full piece can be slow roasted for pulled pork where the marbled fat renders a rich gravy.
Our fantastic pork is locally sourced from Yorkshire Farmers, predominately Mark Brankley who is based in York. The beautiful flavour of this meat reflects the way in which it is reared. Succulent, soft and buttery, Mark’s pigs will give you great results in the kitchen.
